Seafood Bread with Garlic and Cheese Ajo
Ingredients:
For the Seafood Bread:
1 large sourdough loaf round or oval
1 cup cooked shrimp, chopped
1 cup cooked crab meat or imitation crab
1 cups shredded mozzarella cheese
cup shredded Parmesan cheese
4 tablespoons unsalted butter, melted
3 cloves garlic, minced
2 tablespoons fresh parsley, chopped
teaspoon crushed red pepper flakes optional
For the Garlic Cheese Ajo Sauce:
cup mayonnaise
cup sour cream
2 cloves garlic, finely minced or grated
cup grated sharp cheddar or Manchego cheese
Salt & pepper to taste
1 tablespoon lemon juice
1 teaspoon smoked paprika
Directions:
Preheat oven to 375F 190C. Line a baking sheet with parchment paper.
Using a serrated knife, cut the bread in a crisscross pattern, making sure not to cut all the way through to the bottom.
In a bowl, mix melted butter, garlic, parsley, and red pepper flakes. Carefully spoon or brush the mixture into the cuts of the bread.
Stuff the chopped shrimp, crab, mozzarella, and Parmesan evenly into the cracks of the bread.
Wrap the bread in foil and bake for 20 minutes. Unwrap and bake another 1015 minutes until golden and bubbly.
While the bread bakes, whisk together all ingredients for the garlic cheese ajo sauce until smooth and creamy.
Serve the warm seafood bread with the ajo sauce on the side for dipping.
