Grilled Shrimp Bowl with Creamy Garlic Sauce

Ingredients:

1 lb large shrimp, peeled and deveined

1 tablespoon olive oil

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/4 teaspoon ground cumin

Salt and pepper to taste

2 cups cooked white rice or brown rice

1/2 cup sour cream

1/4 cup mayonnaise

2 tablespoons fresh lemon juice


3 cloves garlic, minced

1 tablespoon fresh parsley, chopped for garnish

Directions:

Preheat the grill to medium-high heat.

In a bowl, toss the shrimp with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper until evenly coated.

Thread the shrimp onto skewers or place them directly on the grill. Grill for 23 minutes per side or until the shrimp are pink and opaque. Remove from heat and set aside.

While the shrimp are grilling, prepare the creamy garlic sauce. In a small bowl, whisk together sour cream, mayonnaise, lemon juice, minced garlic, salt, and pepper until smooth and creamy.

To assemble the bowls, divide the cooked rice between bowls and top with grilled shrimp. Drizzle the creamy garlic sauce over the shrimp and rice.

Garnish with chopped fresh parsley and serve immediately.
