Salmon Bites with Lemon Butter Orzo

Ingredients:

1 lb salmon fillets, cut into bite-sized pieces

2 tablespoons olive oil

Salt and pepper, to taste

1 cup orzo pasta

2 tablespoons unsalted butter

Zest and juice of 1 lemon

1/4 cup fresh parsley, chopped

1 tablespoon garlic, minced

1/4 cup grated Parmesan cheese optional

Directions:


Preheat oven to 400F 200C.

In a medium bowl, toss salmon pieces with olive oil, salt, and pepper. Spread them evenly on a baking sheet.

Bake for 10-12 minutes or until the salmon is cooked through and lightly crispy on the edges.

While the salmon is baking, bring a pot of salted water to a boil. Add the orzo pasta and cook according to package instructions usually 8-10 minutes. Drain and set aside.

In a large skillet, melt the butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

Add the cooked orzo to the skillet and toss in the melted butter and garlic. Stir in the lemon zest and juice.

Season with salt and pepper to taste.

Serve the salmon bites on top of the lemon butter orzo and garnish with fresh parsley and Parmesan cheese if desired.
