Healthy Pumpkin Oatmeal Mug Cake
Ingredients for Healthy Pumpkin Oatmeal Mug Cake:
1/4 cup pumpkin puree
1/4 cup old-fashioned oats
1 tablespoon maple syrup
1/2 teaspoon cinnamon

1/2 teaspoon baking powder
1 egg white
1 tablespoon almond milk
1/4 teaspoon vanilla extract
Optional toppings: chopped nuts, chocolate chips, or yogurt
Directions:
In a microwave-safe mug, mix the pumpkin puree, oats, maple syrup, cinnamon, pumpkin spice, baking powder, egg white, almond milk, and vanilla extract until well combined.
Microwave on high for 1 1/2 to 2 minutes, or until the cake is cooked through and set.
