Apple Fritters
Crispy Cinnamon Apple Fritters
Ingredients:
2 cups all-purpose flour
cup granulated sugar
2 teaspoons baking powder
teaspoon salt
1 teaspoon cinnamon
teaspoon nutmeg
cup whole milk
2 large eggs
2 teaspoons vanilla extract
3 cups diced apples peeled and cored
Vegetable oil for frying
For the Glaze:
1 cups powdered sugar
3 tablespoons milk
1 teaspoon vanilla extract
Directions:
In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
In a separate bowl, whisk together the milk, eggs, and vanilla extract until smooth.
Gradually stir the wet ingredients into the dry ingredients until just combined. Fold in the diced apples.
In a deep skillet or Dutch oven, heat about 2 inches of vegetable oil to 350F 175C.
Drop large spoonfuls of the batter into the hot oil, frying a few fritters at a time. Cook each fritter for 2-3 minutes on each side, or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.
To make the glaze, whisk together the powdered sugar, milk, and vanilla extract in a small bowl.
Once the fritters are slightly cooled, dip or drizzle them with the glaze. Allow the glaze to set for a few minutes before serving.
