Pineapple Cake

This Hawaiian-inspired Pineapple Cake is bursting with tropical flavors from crushed pineapple and is topped with a rich, creamy cream cheese frosting. Perfect for any occasion!

Ingredients:

For the Cake:

2 cups all-purpose flour

2 cups sugar

2 eggs 讀

1 teaspoon baking soda 籠

1 teaspoon vanilla extract

Pinch of salt 蓼

1 can 20 oz crushed pineapple in juice not syrup

1 cup chopped nuts optional

For the Frosting:


1/2 cup unsalted butter, softened 杻

1 package 8 oz cream cheese, softened 燎

1 teaspoon vanilla extract

1 1/2 cups confectioners sugar

Coconut flakes for garnish optional 便

Instructions:

1 Preheat the oven: Set the oven to 350F 175C. Grease a 9×13 inch baking dish.

2 Make the batter: In a large bowl, combine flour, sugar, eggs, baking soda, vanilla extract, salt, and the entire can of crushed pineapple juice included. Mix until well blended.

3 Bake: Pour the batter into the prepared baking dish. Bake for 35-40 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.

4 Prepare the frosting: While the cake bakes, beat together butter, cream cheese, and vanilla extract until smooth. Gradually add the confectioners sugar until the frosting is creamy and fluffy.

5 Frost the cake: Once the cake is slightly cooled but still warm, spread the cream cheese frosting evenly over the top. Garnish with chopped nuts and coconut flakes, if desired.

6 Cool & Serve: Let the cake cool completely before cutting and serving. Enjoy this tropical delight!
