Raspberry & White Chocolate Tartlets Recipe

Ingredients:
For the Tartlet Shells:
1 cups all-purpose flour 稜
cup granulated sugar
cup unsalted butter, chilled and diced 杻
1 large egg yolk 讀
2 tablespoons ice water
For the Filling:
cup raspberry jam
2 cups white chocolate, chopped
1 cup heavy cream 拏
For the Garnish:
cup shelled pistachios, roughly chopped
Fresh raspberries for garnish
Instructions:
Step 1: Prepare the Tartlet Shells
Combine Dry Ingredients:
In a food processor, pulse together the flour and sugar until well mixed.
Add Butter:
Add the chilled and diced butter to the flour mixture and pulse until it resembles coarse crumbs.
Mix Egg and Water:
In a small bowl, mix the egg yolk and ice water together. Drizzle this mixture over the flour mixture, pulsing until the dough just comes together.
Form Tartlet Shells:
Press the dough into tartlet pans, making sure to cover the bottom and sides. Prick the bottoms with a fork to prevent bubbling.
Chill:
Refrigerate the tartlet shells for 30 minutes.
Step 2: Bake the Tartlet Shells
Preheat the Oven:
Preheat your oven to 375F 190C.
Bake:
Bake the tartlet shells for 12-15 minutes or until they are golden brown. Let them cool completely before filling.
Step 3: Prepare the Filling
Spread Raspberry Jam:
Once the tart shells are cooled, spread a layer of raspberry jam into the base of each tart shell.
Melt White Chocolate:
In a double boiler, melt the chopped white chocolate until smooth. Remove from heat.
Whisk in Cream:
Whisk the heavy cream into the melted white chocolate until well combined and smooth.
Fill Tartlets:
Pour the white chocolate mixture over the jam layer in each tartlet shell.
Chill to Set:
Refrigerate the filled tartlets until set, about 2 hours.
Step 4: Garnish and Serve
Garnish:
Before serving, sprinkle the chopped pistachios on top of the tartlets and add fresh raspberries for decoration.
