Pecan Pie Cookies
Delicious Pecan Pie Cookie Bites
Ingredients:
1 cup unsalted butter, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
1 cup chopped pecans
1/4 cup corn syrup
1/4 cup brown sugar
2 large eggs
Directions:
Preheat your oven to 350F 175C.
In a large mixing bowl, cream together the softened butter, granulated sugar, and vanilla extract until light and fluffy.
Add the flour and salt to the creamed mixture and mix until a dough forms.
Shape the dough into 1-inch balls and place them on an ungreased baking sheet.
Make an indentation in the center of each cookie using your thumb.
In a separate bowl, mix together the chopped pecans, corn syrup, brown sugar, and eggs.
Carefully spoon this pecan mixture into the center of each cookie.
Bake in the preheated oven for 12-15 minutes, or until the cookies are golden brown.
Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
