Pineapple Cowboy Candy
Ingredients
4 cups diced pineapple
2 cups granulated sugar
1/2 cup apple cider vinegar
1 teaspoon ground turmeric
1/2 teaspoon cayenne pepper
1/2 teaspoon ground ginger
Pinch of salt 蓼
Directions
1 Combine Ingredients:
In a large saucepan, mix together diced pineapple, sugar, apple cider vinegar, turmeric, cayenne pepper, ginger, and a pinch of salt.
2 Bring to Boil:
Place the saucepan over medium-high heat and bring the mixture to a boil, stirring constantly to dissolve the sugar.
3 Simmer:
Lower the heat and simmer the mixture, stirring occasionally, for 4560 minutes or until it thickens and becomes syrupy.
4 Cool Slightly:
Remove the saucepan from heat and let the mixture cool for a few minutes.
5 Separate Pineapple:
Using a slotted spoon, transfer the candied pineapple pieces to a wire rack set over a baking sheet to cool and dry.
6 Sugar Coating:
Once the pineapple pieces are cooled and slightly tacky, roll them in additional granulated sugar to coat evenly.
7 Set:
Place the sugar-coated pineapple pieces on a parchment-lined baking sheet to set completely.
8 Store:
Transfer the finished Pineapple Cowboy Candy to an airtight container. Store at room temperature for up to two weeks.
