Instructions:
1. Preheat the Oven: Set your oven to 425F 220C and lightly coat a rimmed baking sheet with cooking spray to keep those sweet potatoes from sticking.
2. Prepare the Sweet Potatoes: In a large bowl, toss the sweet potato rounds with olive oil, salt, and pepper until evenly coated. Spread them in a single layer on the baking sheet. For extra crispiness, lightly spray the tops with more oil.
3. Roast the Sweet Potatoes: Pop the baking sheet onto the middle rack of the oven. Roast for 10 minutes, then flip the sweet potatoes. Continue roasting for another 8-12 minutes until theyre tender and have a delicious caramelization around the edges.

5. Assemble the Bites: Once the sweet potatoes have cooled slightly, spread about 1 teaspoon of the whipped goat cheese onto each round. Sprinkle with toasted pecans and cranberries, then drizzle with sugar-free honey substitute for a touch of sweetness.
