Would you Eat Strawberry Drip Cake?
Ingredients:
– 1 cup fresh strawberries, diced
– 1/2 cup unsalted butter, softened
– 1 cup strawberry preserves or jam
– 1/4 cup granulated sugar
– 1 cup milk
– 1 teaspoon vanilla extract
– 1/2 cup fresh strawberries, pureed
– 1/4 cup heavy cream
– 3 large eggs
– 2 1/2 cups all-purpose flour
– 1/2 teaspoon salt
– 1 tablespoon baking powder
– 1 cup unsalted butter, softened
– 3 cups powdered sugar
– 1/2 cup fresh strawberries, sliced
Instructions:
1. Preheat your oven to 350F 175C and prepare two 9-inch round cake pans by greasing and flouring them.
2. In a large mixing bowl, cream the softened butter and granulated sugar together until the mixture is light and fluffy. Add the eggs one at a time, making sure to beat well after each addition. Stir in the vanilla extract.
3. In another bowl, combine the all-purpose flour, baking powder, and salt. Gradually mix the dry ingredients into the butter mixture, alternating with the milk, until everything is just combined.
4. Gently fold in the diced fresh strawberries into the batter. Carefully divide the batter between the prepared cake pans.
5. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.
6. To make the strawberry filling, spread a layer of strawberry preserves on top of one cooled cake layer, then add the fresh sliced strawberries. Place the second cake layer on top of the first.
7. For the frosting, start by beating the softened butter until creamy. Gradually add the powdered sugar, heavy cream, vanilla extract, and pureed strawberries, mixing until the frosting is smooth and fluffy.
8. Apply a thin layer of frosting around the entire cake to seal in any crumbs, then chill the cake for about 30 minutes to set this layer.
9. For the strawberry drip, combine the pureed strawberries and granulated sugar in a small saucepan, heating until the sugar dissolves. Stir in the heavy cream and gently cook until the mixture thickens slightly. Allow it to cool just a bit before drizzling it over the cake.
10. Pour the strawberry drip over the top of your beautifully frosted cake, letting it naturally cascade down the sides.
Enjoy this sweet and visually stunning Strawberry Drip Cake, perfect for celebrating special moments!
