Ingredients:
– 1 cup unsalted butter, softened
– 4 large eggs
– 1 teaspoon vanilla extract
– 2 1/2 cups all-purpose flour
– 1 cup buttermilk

– 1 1/2 cups granulated sugar

– 1/2 cup dragon fruit puree for frosting
– Fresh dragon fruit slices for decoration

Instructions:
1. Preheat your oven to 350F 175C. Grab three 8-inch round cake pans and grease and flour them well.
2. In a medium bowl, mix together the flour, baking powder, baking soda, and salt until well combined.
3. In a large bowl, beat the softened butter and sugar together until its light and fluffy. Add the eggs, one at a time, ensuring you mix well after each addition. Then, stir in the vanilla extract.
4. Gradually mix the flour blend into the butter mixture, alternating with the buttermilk. Start and end with the flour mixture. Gently fold in the dragon fruit puree and any pink food coloring if you want to amp up the color.
5. Divide the cake batter evenly between the prepared pans and smooth out the tops with a spatula.
6. Bake in the preheated oven for 25-30 minutes. Check for doneness by inserting a toothpick into the center; it should come out clean. Let the cakes cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.
7. For the luscious frosting, whip the softened butter until creamy. Gradually mix in the powdered sugar until combined. Add in the heavy cream, vanilla extract, and dragon fruit puree. Mix until everything is smooth and fluffy, adding pink food coloring if desired.
8. After the cakes have cooled completely, spread a generous layer of frosting between the layers and then cover the top and sides of the cake with the remaining frosting.
9. Decorate your masterpiece with fresh dragon fruit slices and sprinkle edible flowers for a beautiful finish.
