Ingredients:

– 1/4 cup sugar

– 1 tablespoon lemon juice

– 1/2 cup sugar

– 1 1/2 cups chocolate cookie crumbs

– 8 oz semi-sweet chocolate, chopped

– 1/2 cup butter, melted

– 4 large egg yolks

– 1/4 cup sugar

– 1 1/2 cups heavy cream

– 1 tablespoon cornstarch

– 2 cups fresh raspberries

Instructions:


1. Start by preheating your oven to 350F 175C and grease a 9-inch springform pan to ensure nothing sticks.

2. In a medium bowl, combine the chocolate cookie crumbs, 1/4 cup sugar, and melted butter. Mix well and press this mixture firmly into the bottom of your prepared pan to create a delicious crust.

3. For the chocolate mousse, melt the chopped semi-sweet chocolate. You can do this using a heatproof bowl over a pot of simmering water or in the microwave in 30-second bursts, stirring in between until smooth. Allow it to cool slightly.

4. In another saucepan, heat 1 cup of heavy cream until it just starts to simmer. In a separate bowl, whisk together the egg yolks and 1/2 cup sugar until smooth. Gradually pour the hot cream into the yolk mixture, whisking continuously to prevent cooking the eggs. Return this mixture to the saucepan and cook over medium heat, stirring constantly until it thickens just a bit.

5. Take the saucepan off the heat and stir in the melted chocolate and 1 teaspoon of vanilla extract until everything is combined and creamy. Let this mixture cool to room temperature.

6. Whip the remaining 1/2 cup of heavy cream in a separate bowl until it forms soft peaks. Gently fold this whipped cream into the cooled chocolate mixture until everything is beautifully combined.

7. Pour the luscious chocolate mousse over the crust in the springform pan. Cover and refrigerate for at least 4 hours or overnight until it is set.

8. For the raspberry layer, combine fresh raspberries, 1/4 cup of sugar, lemon juice, and cornstarch in a small saucepan. Cook over medium heat, stirring frequently, for about 5-7 minutes until it thickens and turns syrupy. Allow it to cool slightly.

9. Once the chocolate mousse layer has set, spread the raspberry mixture evenly on top. Return to the refrigerator to chill until you are ready to serve this delightful dessert.
