Ingredients:

– 1/2 cup creamy peanut butter

– 1/2 cup unsalted butter, softened

– 1/2 teaspoon baking powder

– 1/2 teaspoon baking soda

– 1 cup granulated sugar

– 1/2 teaspoon salt

– 1 1/2 cups shredded zucchini

– 1 cup semi-sweet chocolate chips

– 1 1/2 cups all-purpose flour

– 2 large eggs

– 1 teaspoon vanilla extract

– 1/2 cup chopped walnuts optional

– 1 cup peanut butter frosting store-bought or homemade

– Additional chocolate chips for garnish


Instructions:

1. Preheat your oven to 350F 175C and grease and flour two 9-inch round cake pans.

2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.

3. In a large bowl, beat the softened butter and creamy peanut butter with granulated sugar until the mixture is creamy and smooth.

4. Add the eggs one at a time, beating well after each addition to ensure everything is fully incorporated. Mix in the vanilla extract.

5. Gradually add the dry flour mixture to the wet ingredients, mixing just until the two are combined.

6. Carefully fold in the shredded zucchini, chocolate chips, and walnuts if using until evenly distributed throughout the batter.

7. Pour the batter evenly into the prepared cake pans and smooth the tops with a spatula.

8. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

9. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

10. Once cooled, frost the top of one cake layer with peanut butter frosting, then place the second layer on top and frost the entire cake.

11. Finally, garnish the cake with additional chocolate chips for an extra touch!
