Ingredients:

Instructions:

1. Preheat your oven to 350F 175C and line a muffin tin with cupcake liners.

2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Beat in the eggs, one at a time, ensuring each is mixed well before adding the next. Stir in the vanilla extract.

4. Gradually add the dry ingredients to the wet mixture in three parts, alternating with the sour cream and milk, starting and ending with the dry ingredients. Mix until just combined.

5. Gently fold in fresh raspberries and chopped pistachios.

6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.

7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow cupcakes to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

8. For the filling, combine raspberry jam and mascarpone cheese until smooth.

9. Once the cupcakes are cooled, cut a small hole in the center of each and fill it with the raspberry mascarpone mixture.

10. For the frosting, beat the softened butter until creamy. Gradually add powdered sugar, vanilla extract, and heavy cream, mixing until smooth and fluffy.

11. Frost the filled cupcakes and sprinkle with fresh raspberries and chopped pistachios for the perfect finishing touch.
