Ingredients:

– 1/2 cup lime juice freshly squeezed

– 1 can sweetened condensed milk

– 1/4 cup melted butter

– 1 cup crushed graham crackers

– 1/2 cup whipped cream plus extra for topping

– 1 tablespoon lime zest

– Mini pie crusts store-bought or homemade

Instructions:

1. In a mixing bowl, combine the crushed graham crackers and melted butter until the mixture resembles wet sand.


2. Press the graham cracker mixture evenly into the bottoms of the mini pie crusts, packing it tightly. Set aside.

3. In another bowl, whisk together the sweetened condensed milk and lime juice until smooth.

4. Gently fold in the whipped cream and lime zest until everything is well combined and fluffy.

5. Spoon or pipe the lime filling into each of the prepared mini pie crusts, filling them to the top.

6. Chill in the refrigerator for at least 2 hours to allow the filling to set.

7. Before serving, top each mini pie with a dollop of whipped cream and an extra sprinkle of lime zest for garnish.
