Ingredients:

Instructions:
1. Preheat the oven to 350F 175C and line a baking sheet with parchment paper.
2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
3. In a large bowl, cream the softened butter and granulated sugar together until the mixture is light and fluffy.
4. Beat in the egg and vanilla extract to the butter mixture until well combined.
5. Gradually mix the flour blend into the butter mixture until just combined, taking care not to overmix.
6. Shape the dough into 1-inch balls and place them onto the prepared baking sheet. Use your thumb to create an indent in the center of each ball.
7. Fill each thumbprint with lemon curd and sprinkle the tops with toasted shredded coconut.
8. Bake for 12-15 minutes or until the edges of the cookies start to turn golden brown.
9. Remove from the oven and sprinkle with extra toasted coconut immediately while they are still warm.
10. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
