Ingredients:
– 1/2 cup unsalted butter, softened
– 1/2 cup buttermilk
– 1/2 cup peanut butter
– 1/2 cup mini M&Ms
– 1/2 cup mini chocolate chips
– 1/4 teaspoon baking soda
– 1 1/2 cups all-purpose flour
– 1 teaspoon vanilla extract
– 2 large eggs
– 1 1/2 cups granulated sugar
– 1/4 teaspoon salt
– 1/2 cup brown sugar, packed
– 2 tablespoons milk
– 1/2 cup powdered sugar
– 2-3 tablespoons heavy cream or milk
– 1/4 teaspoon baking powder
Instructions:
1. Preheat your oven to 350F 175C and line a 12-cup muffin tin with cupcake liners.
2. In a medium bowl, mix together the all-purpose flour, baking powder, baking soda, and salt.
3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Add the eggs one by one, mixing well after each. Stir in the vanilla extract.
4. Gradually add the dry mixture and buttermilk to the wet mixture, starting and ending with the dry. Blend until just combined.
5. Fill each cupcake liner about two-thirds full with batter. Bake for 18-20 minutes or until a toothpick comes out clean. Cool completely on a wire rack.
6. For the Monster Cookie Dough Filling, mix the softened butter, brown sugar, and granulated sugar until smooth. Then add peanut butter, milk, and vanilla extract. Gradually mix in the flour and salt until well combined, then fold in the mini chocolate chips and mini M&Ms.
7. Roll the cookie dough mixture into small balls, around 1 teaspoon each, and refrigerate until firm.
8. Once cupcakes have cooled, use a knife or corer to remove a small piece from the center. Place a cookie dough ball into each cupcake.
9. For the frosting, beat together the softened butter and peanut butter until creamy. Gradually add powdered sugar, one cup at a time, mixing well. Add vanilla extract and 2 tablespoons of heavy cream or milk, and beat until light and fluffy. Adjust with more cream or milk as needed.
10. Frost the filled cupcakes with the creamy peanut butter frosting and top with extra mini chocolate chips and M&Ms for a fun finish.
