Ingredients:

– 1 cup all-purpose flour

– 1 teaspoon baking powder

– 1/2 cup unsweetened cocoa powder

– 1 cup granulated sugar

– 1/2 cup unsalted butter, softened

– 3 large eggs

– 1 teaspoon vanilla extract

– 1 cup milk

– 1 package vanilla pudding mix

– 2 cups heavy whipping cream

– 1 cup chocolate ganache store-bought or homemade

Instructions:


1. Preheat your oven to 350F 175C. Line a cupcake pan with paper liners.

2. In a medium bowl, whisk together the flour, cocoa powder, and baking powder. Set aside.

3. In a large mixing bowl, beat the softened butter and sugar together until light and fluffy.

4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

5. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Begin and end with the flour mixture. Mix until just combined.

6. Scoop the batter into the prepared cupcake liners, filling each about 2/3 full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely.

7. For the vanilla pudding filling, prepare according to package instructions and chill in the refrigerator.

8. Once the cupcakes are cooled, use a small knife or cupcake corer to create a hole in the center of each cupcake. Fill the holes with chilled vanilla pudding.

9. In a separate bowl, whip the heavy cream until stiff peaks form, then pipe or spread the whipped cream on top of each cupcake.

10. Drizzle chocolate ganache over the whipped cream and serve immediately!
