Ingredients:

For the Pot Roast:

2-3 lbs beef chuck roast 數

2 tablespoons olive oil

1 large onion, diced 暈

4 cloves garlic, minced 龍

2 cups beef broth

1 cup red wine optional, for depth of flavor

2 tablespoons tomato paste

1 teaspoon dried thyme

1 bay leaf

2 cups baby carrots 凌

2 cups baby potatoes or quartered regular potatoes 凜

Salt 蓼 and black pepper to taste

For the Mashed Potatoes:

4 large potatoes, peeled and cubed 凜

cup heavy cream 拏

4 tablespoons butter 杻

Salt 蓼 and black pepper to taste

Instructions:


1. Prepare the Pot Roast:

Season the beef chuck roast generously with salt and black pepper.

Heat olive oil in a large Dutch oven over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side. Remove and set aside.

2. Build the Flavor Base:

In the same pot, sauté the diced onion and garlic until fragrant and softened.

Stir in the tomato paste and cook for 1-2 minutes.

3. Simmer the Roast:

Pour in the beef broth and red wine if using to deglaze the pot, scraping up any browned bits.

Add thyme, bay leaf, carrots, and potatoes to the pot. Place the roast back in and cover with a lid.

Reduce the heat to low and simmer for 3-4 hours, or until the beef is tender and falls apart easily. Alternatively, cook in a preheated oven at 300F 150C.

4. Make the Mashed Potatoes:

While the roast is cooking, boil the potatoes in salted water until fork-tender, about 15-20 minutes. Drain and mash.

Stir in heavy cream, butter, salt, and pepper until smooth and creamy.

5. Assemble and Serve:

Serve the pot roast over a bed of creamy mashed potatoes. Spoon the gravy and vegetables over the top. Garnish with fresh thyme for an elegant touch.

Pro Tip:

For an even thicker gravy, whisk together 1 tablespoon of cornstarch with 2 tablespoons of water and stir it into the pot during the last 10 minutes of cooking.
