Ingredients:

Instructions:
1. Prepare the Cake Layers:
Preheat the oven to 350F 175C. Grease and flour two 9-inch round cake pans.
In a bowl, mix flour, baking powder, and salt. Set aside.
In a large mixing bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
Gradually add the dry ingredients to the wet mixture, alternating with milk, and mix until smooth.
Divide the batter evenly between the pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Cool completely.
2. Make the Raspberry Filling:
In a saucepan, combine raspberries, sugar, cornstarch, and lemon juice.
Cook over medium heat until the mixture thickens and becomes jam-like. Let it cool completely.
3. Whip the Cream:
In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
4. Assemble the Cake:
Place one cake layer on a serving plate. Spread a layer of whipped cream over the top, followed by the raspberry filling.
Add the second cake layer and frost the entire cake with the remaining whipped cream.
5. Garnish:
Decorate the top with fresh raspberries, mint leaves, and a dusting of powdered sugar for a beautiful finish.
