Buttery Russian Tea Balls
Ingredients:
– 1 cup unsalted butter, softened
– 1/2 cup powdered sugar plus extra for coating
– 2 cups all-purpose flour
– 1 cup finely chopped pecans or walnuts
– 1 tsp vanilla extract
– 1/4 tsp salt
Instructions:
1. Preheat the Oven: Set your oven to 350F 175C and line a baking sheet with parchment paper.
2. Make the Dough: In a large bowl, cream together the softened butter, 1/2 cup of powdered sugar, and vanilla extract until the mix is smooth and fluffy.
3. Mix it Up: Gradually add in the all-purpose flour, salt, and finely chopped nuts until a soft dough forms.
4. Shape the Balls: Take small portions of dough and roll them into 1-inch balls. Place them on the prepared baking sheet, leaving some space between each cookie.
5. Bake: Pop those cookies into the oven and bake for about 12 minutes, or until the bottoms are lightly golden. Be careful not to overbake!
6. Cool Down: Let the cookies cool on the baking sheet for a bit after removing them from the oven.
7. Coat with Sugar: While the cookies are still warm, roll them in powdered sugar until they are fully coated.
8. Final Touch: Allow them to cool completely. Once cooled, roll them in powdered sugar again for that classic snowy finish!
Tips & Notes:
These delightful cookies are also loved as Mexican Wedding Cookies or Snowball Cookies. For a festive twist, swap out pecans for finely chopped pistachios or almonds! Store in an airtight container at room temperature for up to 1 week, or freeze for longer storage.
