Chocolate Chip Cookie Dough Cheesecake
Ingredients:
For the Crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup melted butter
For the Cheesecake Filling:
16 oz cream cheese, softened
1/2 cup granulated sugar
1/4 cup brown sugar
2 tsp vanilla extract
1/2 cup heavy cream
1 cup mini chocolate chips
1 cup cookie dough pre-made or homemade
For the Topping:
Whipped cream
Extra mini chocolate chips
Chocolate ganache optional
Instructions:
Preheat the oven to 325F 160C. Grease a 9-inch springform pan and set aside.
In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of the pan to form the crust. Bake for 10 minutes, then set aside to cool.
In a large bowl, beat the cream cheese, granulated sugar, and brown sugar until smooth.
Add the vanilla extract and heavy cream, mixing until fully combined.
Gently fold in the mini chocolate chips and cookie dough pieces.
Pour the cheesecake filling over the cooled crust, smoothing the top. Cover and chill in the refrigerator for at least 6 hours or overnight.
Before serving, garnish with whipped cream, extra mini chocolate chips, and drizzle with chocolate ganache if desired.
