Grilled Lamb Chops with Chimichurri Sauce

Ingredients:

For the Lamb Chops:

8 lamb chops

2 tbsp olive oil

2 cloves garlic, minced

1 tsp paprika

1 tsp dried oregano

Salt and black pepper to taste

For the Chimichurri Sauce:

1 cup fresh parsley, chopped

1/2 cup fresh cilantro, chopped

3 cloves garlic, minced

1/2 cup olive oil

2 tbsp red wine vinegar

1 tsp red chili flakes optional


Salt and black pepper to taste

Instructions:

1. Prepare the Lamb Chops:

In a small bowl, mix olive oil, minced garlic, paprika, oregano, salt, and black pepper.

Rub the mixture evenly over the lamb chops and let them marinate for 30 minutes.

2. Make the Chimichurri Sauce:

In a blender or food processor, combine parsley, cilantro, garlic, olive oil, red wine vinegar, chili flakes, salt, and pepper.

Blend until smooth but slightly chunky. Set aside.

3. Grill the Lamb Chops:

Preheat a grill or grill pan over medium-high heat.

Cook the lamb chops for 3-4 minutes per side for medium-rare or adjust to your preferred doneness.

4. Serve:

Place the grilled lamb chops on a platter and spoon chimichurri sauce over the top.

Serve hot with additional sauce on the side.
