Blueberry Chocolate Cheesecake
Ingredients:
200g chocolate biscuits, crushed
100g unsalted butter, melted
500g cream cheese, softened
200g sugar
2 eggs
1 tsp vanilla extract
1 cup blueberry puree
1/2 cup fresh blueberries
100g dark chocolate, melted
Fresh blueberries for topping
Instructions:
1. Mix crushed chocolate biscuits with melted butter and press into the base of a springform pan. Chill for 30 minutes.
2. Preheat oven to 160C 320F. Beat cream cheese and sugar until smooth. Add eggs one at a time, followed by vanilla extract.
3. Divide the mixture in half. Add blueberry puree to one half and mix well.
4. Pour the blueberry mixture over the biscuit crust, then layer the plain cheesecake mixture on top. Sprinkle fresh blueberries in between layers.
5. Bake for 50-60 minutes or until set. Cool completely.
6. Drizzle melted dark chocolate over the cheesecake and top with fresh blueberries. Chill for at least 4 hours before serving. Enjoy!
