Decadent Chocolate Cake with Silky Mousse
Ingredients:
– 1 3/4 cups all-purpose flour
– 1 cup granulated sugar
– 1/2 cup unsweetened cocoa powder
– 1/2 cup butter, softened
– 4 large eggs
– 1 cup buttermilk
– 1 1/2 teaspoons baking powder
– 1 teaspoon vanilla extract
– 1/2 teaspoon salt
– 1 cup heavy cream
– 1/4 cup powdered sugar
– 1 cup semi-sweet chocolate chips
Instructions:
1. Preheat your oven to 350F 175C. Grease and flour two 9-inch round cake pans and set aside.
2. In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy.
3. Add eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
4. In another bowl, whisk together the flour, cocoa powder, baking powder, and salt.
5. Gradually add the dry mixture to the creamed mixture, alternating with the buttermilk. Mix until just combined.
6. Divide the batter evenly between the prepared cake pans.
7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
8. To make the silky mousse, melt the chocolate chips in a microwave-safe bowl, stirring until smooth.
9. In another bowl, whip the heavy cream and powdered sugar until stiff peaks form. Gently fold the melted chocolate into the whipped cream until well combined.
10. Once the cakes are completely cooled, place one layer on a serving platter and spread a generous layer of the mousse on top. Top with the second cake layer.
11. Spread remaining mousse over the top and sides of the cake. Decorate as desired with chocolate shavings or sprinkles.
