Delightful Boston Cream Cake Roll
Ingredients:
– 3 large eggs
– 1 cup heavy whipping cream
– 1 cup granulated sugar
– 1 tablespoon vanilla extract
– 1/2 cup all-purpose flour
– 1/4 cup cocoa powder
– 1 cup confectioners sugar
– 1/2 cup chocolate chips
– 1/4 teaspoon baking powder
– Pinch of salt
– 1/2 cup milk
Instructions:
1. Preheat your oven to 350F 175C. Grease and line a jelly roll pan 10×15 inches with parchment paper.
2. In a large mixing bowl, beat the eggs and the granulated sugar together until they are light and fluffy, about 5 minutes.
3. Gently fold in the vanilla extract, flour, cocoa powder, baking powder, and salt until just combined.
4. Pour the batter into the prepared jelly roll pan and spread it evenly.
5. Bake in the oven for 12-15 minutes until the cake springs back when lightly pressed.
6. While the cake is baking, prepare a clean kitchen towel. Dust it with confectioners sugar.
7. Once the cake is done, remove it from the oven and immediately flip it onto the prepared towel. Peel off the parchment paper.
8. Roll the cake up in the towel, starting from the shorter end. Let it cool completely.

10. Once the cake has cooled, unroll it carefully and spread the whipped cream filling over the top.
11. Roll the cake back up without the towel. Place it seam side down on a serving platter.
12. Melt the chocolate chips in a microwave-safe bowl in 20-second intervals, stirring after each, until smooth. Drizzle the melted chocolate over the rolled cake for a beautiful finish.
13. Refrigerate the cake for at least 1 hour before slicing to set the filling.
