Ingredients:

– 1 cup shredded cheese cheddar or Monterey Jack

– 1 pound ground beef

– 1 can refried beans

– 1 cup diced bell peppers

– 1 teaspoon taco seasoning

– 4 large flour tortillas

– 1 cup crunchy tortilla chips, crushed

– 1 tablespoon olive oil

– 1/2 cup salsa

– 1/4 cup sour cream

– 1 cup lettuce, shredded

Instructions:


1. In a skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spatula, about 5-7 minutes.

2. Stir in the diced bell peppers and cook for another 3 minutes until they soften.

3. Sprinkle in the taco seasoning and mix well. Stir in the refried beans, heating everything through until warm.

4. Lay a tortilla flat on a clean surface. Spoon some of the beef mixture onto the center, then sprinkle a generous amount of shredded cheese on top.

5. Fold in the sides of the tortilla, then roll it tightly from the bottom to create a burrito.

6. Repeat with the remaining tortillas and filling.

7. Preheat a non-stick skillet over medium heat. Place the burritos seam-side down and cook for 3-4 minutes, until golden and crispy.

8. Carefully flip the burritos to crisp up the other side, adding more cheese on top and allowing it to melt as they cook.

9. Remove the burritos from the skillet and crush the tortilla chips on a plate. Roll the burritos in the crushed chips to add that crunchy twist.

10. Serve with salsa, sour cream, and shredded lettuce on the side.
