Ingredients

2 cups graham cracker crumbs

24 oz 680g cream cheese, softened
1 cup granulated sugar
1 cup sour cream
1 tsp vanilla extract

1 cup fresh blueberries

2 tbsp granulated sugar
1 tbsp lime juice

Instructions
1. Prepare the Crust:
Preheat oven to 325F 163C. Grease a 9-inch springform pan.
Combine graham cracker crumbs and melted butter in a bowl. Press the mixture firmly into the bottom of the pan.
Bake for 10 minutes, then let cool completely.
2. Make the Cheesecake Batter:
In a large bowl, beat softened cream cheese until smooth. Gradually add sugar and mix until creamy.
Beat in sour cream and vanilla extract. Add eggs one at a time, mixing well after each addition.
Stir in lime zest and lime juice, followed by gently folding in 1 cup of fresh blueberries.
3. Create the Blueberry Swirl:
In a small saucepan over medium heat, combine cup blueberries, sugar, and lime juice. Cook while mashing the blueberries until the mixture thickens, about 5 minutes.
Let the mixture cool slightly, then swirl it into the cheesecake batter using a butter knife or skewer for a marbled effect.
4. Bake the Cheesecake:
Pour the batter into the cooled crust and smooth the top.
Bake for 6070 minutes, or until the center is just set and the edges are lightly browned.
Turn off the oven and let the cheesecake cool inside with the door slightly ajar for 1 hour.
5. Chill and Decorate:
Refrigerate the cheesecake for at least 4 hours or overnight.
