Easy Migas: A Quick and Flavorful Mexican Breakfast!
Ingredients:
– 4 large eggs
– 2 corn tortillas, cut into strips or squares
– 1/2 cup shredded cheese cheddar, Monterrey Jack, or a blend
– 1/4 cup diced onion
– 1/4 cup diced bell pepper
– 1/4 cup salsa
– 1 tbsp olive oil
– 1/4 tsp cumin optional
– Salt and pepper to taste
– Fresh cilantro for garnish optional
Instructions:
1 Heat olive oil in a skillet over medium heat. Add the tortilla strips and fry until crispy, about 3-4 minutes. Remove from the pan and set aside.
2 In the same skillet, sauté the onion and bell pepper for 3-4 minutes until softened.
3 In a bowl, whisk the eggs with a pinch of salt, pepper, and cumin if using. Pour the eggs into the skillet with the sautéed vegetables. Cook, stirring gently, until the eggs are scrambled and cooked through.
4 Add the fried tortilla strips back into the pan and stir to combine with the eggs and vegetables.
5 Pour in the salsa and sprinkle with shredded cheese. Let the cheese melt into the eggs.
6 Garnish with fresh cilantro and serve immediately.
