Homemade Stewed Tomatoes
Ingredients:
4 cups fresh tomatoes, peeled and chopped1 medium onion, chopped2 cloves garlic, minced1 tablespoon olive oil1 teaspoon dried basil1/2 teaspoon dried oregano1/4 teaspoon sugarSalt and pepper to taste1/4 cup fresh parsley, chopped optional, for garnish
Instructions:
Heat olive oil in a large skillet over medium heat.Add the chopped onion and garlic, and sauté for 3-4 minutes until softened.Add the chopped tomatoes, basil, oregano, sugar, salt, and pepper. Stir well to combine.Reduce the heat to low and simmer for 30-40 minutes, stirring occasionally, until the tomatoes break down and the sauce thickens.Taste and adjust seasoning if needed. Garnish with fresh parsley, if desired, before serving.
