Roasted Asparagus and Mushrooms
Ingredients:
1 bunch asparagus, trimmed2 cups mushrooms, sliced2 tablespoons olive oil2 cloves garlic, minced1/2 teaspoon dried thymeSalt and pepper to taste1 tablespoon fresh lemon juice optional, for garnishFresh parsley, chopped optional, for garnish
Instructions:
Preheat oven to 400F 200C.Place the asparagus and mushrooms on a baking sheet.Drizzle with olive oil and toss with minced garlic, dried thyme, salt, and pepper until evenly coated.Roast for 15-20 minutes, stirring halfway through, until the asparagus is tender and the mushrooms are golden brown.Garnish with fresh lemon juice and chopped parsley before serving, if desired.
