Easy Lima Beans
Ingredients:
2 cups frozen lima beans or 1 can, drained and rinsed1/4 cup onion, chopped1 tbsp olive oil2 cloves garlic, minced1/2 cup vegetable broth or waterSalt and pepper to taste1/2 tsp dried thyme optional1 tbsp fresh parsley, chopped optional
Instructions:
In a medium skillet, heat olive oil over medium heat. Add onions and garlic, sauté until softened.Stir in lima beans and cook for 2-3 minutes.Add vegetable broth, thyme if using, salt, and pepper. Bring to a simmer.Cover and cook for 10-15 minutes, or until beans are tender and heated through.Stir in fresh parsley if using and adjust seasoning as needed.
