Lemon Panko-Crusted Salmon

Ingredients:

4 salmon fillets1 cup panko breadcrumbs1/4 cup grated Parmesan cheese2 tablespoons fresh parsley, choppedZest of 1 lemon2 tablespoons olive oil1 tablespoon Dijon mustardSalt and pepper to tasteLemon wedges for serving

Instructions:


Preheat oven to 375F 190C and line a baking sheet with parchment paper.In a small bowl, mix panko breadcrumbs, Parmesan cheese, parsley, and lemon zest.Brush salmon fillets with olive oil and Dijon mustard, then season with salt and pepper.Press the breadcrumb mixture onto the top of each fillet.Bake for 12-15 minutes, or until the salmon is cooked through and the crust is golden and crispy.Serve with lemon wedges for a fresh citrus kick.
