Chef Johns Gingerbread Biscotti

Ingredients:

2 1/4 cups all-purpose flour1 1/4 tsp baking powder1/4 tsp baking soda1/4 tsp salt1 1/2 tsp ground ginger1 tsp ground cinnamon1/2 tsp ground cloves1/4 tsp ground nutmeg1/4 cup unsalted butter, softened3/4 cup packed brown sugar2 large eggs1/4 cup molasses

Instructions:


Preheat oven to 350F 175C. Line a baking sheet with parchment paper.In a bowl, combine flour, baking powder, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.In a separate bowl, cream butter and brown sugar together until smooth. Add eggs one at a time, mixing well. Stir in molasses.Gradually mix the dry ingredients into the wet ingredients until combined.Shape the dough into two logs on the prepared baking sheet.Bake for 25 minutes, then let cool slightly. Slice logs diagonally into biscotti pieces.Arrange slices back on the baking sheet and bake for another 10-15 minutes until crisp.
