Cranberry-Orange Biscotti
Ingredients:
2 1/4 cups all-purpose flour1 tsp baking powder1/4 tsp salt3/4 cup granulated sugar1/2 cup unsalted butter, softened2 large eggs1 tsp vanilla extract1 tsp orange zest3/4 cup dried cranberries1/4 cup orange juice
Instructions:
Preheat oven to 350F 175C. Line a baking sheet with parchment paper.In a bowl, whisk together flour, baking powder, and salt.In a separate bowl, beat butter and sugar until creamy. Add eggs one at a time, then stir in vanilla extract and orange zest.Gradually add the dry ingredients to the wet mixture. Stir in cranberries and orange juice until combined.Shape the dough into two logs on the prepared baking sheet and flatten slightly.Bake for 25-30 minutes, then allow to cool for 10 minutes. Slice logs diagonally into biscotti pieces.Place slices back on the baking sheet and bake for 10-15 minutes until golden and crisp.
