Old-Fashioned Persimmon Pudding

Ingredients:

2 cups ripe persimmon pulp

1 1/2 cups granulated sugar

2 large eggs, beaten

1 1/2 cups whole milk

1/2 cup heavy cream

1 teaspoon vanilla extract

1 cup all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon


1/2 teaspoon ground nutmeg

4 tablespoons unsalted butter, melted

Instructions:

Preheat oven to 325F 165C and grease a 9×13-inch baking dish.

In a large bowl, whisk together persimmon pulp, sugar, eggs, milk, cream, and vanilla extract until well blended.

Sift in the flour, baking soda, salt, cinnamon, and nutmeg. Stir to combine.

Add melted butter and mix until smooth. The batter will be thin.

Pour the mixture into the prepared baking dish. Bake for 50-55 minutes, or until the pudding is set and the edges are golden brown.

Let cool slightly before serving.
