Apple Cider Donut Loaf
Ingredients:
– 1 cup apple cider
– 1 cups all-purpose flour
– 1 teaspoon baking powder
– teaspoon baking soda
– 1 teaspoon ground cinnamon
– teaspoon ground nutmeg
– teaspoon ground ginger
– teaspoon salt
– cup unsalted butter, softened
– cup granulated sugar
– cup light brown sugar, packed
– 2 large eggs
– cup sour cream
– 1 teaspoon vanilla extract
For the Cinnamon Sugar Topping:
– 2 tablespoons unsalted butter, melted
– cup granulated sugar
– 1 teaspoon ground cinnamon
Directions:
1. Reduce the Apple Cider:
In a small saucepan, simmer the apple cider over medium heat until it reduces to cup. This should take about 10-15 minutes. Once reduced, set aside to cool.
2. Preheat the Oven and Prepare the Pan:
Preheat your oven to 350F 175C. Grease and flour a standard 9×5-inch loaf pan, or line it with parchment paper.
3. Mix Dry Ingredients:
In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. Set aside.
4. Cream the Butter and Sugars:
In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy. This should take about 3 minutes.
5. Add Wet Ingredients:
Beat in the eggs, one at a time, followed by the sour cream, vanilla extract, and cooled reduced apple cider. Mix until fully combined.
6. Combine Wet and Dry Ingredients:
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
7. Bake the Loaf:
Pour the batter into the prepared loaf pan, smoothing the top with a spatula. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
8. Prepare Cinnamon Sugar Topping:
While the loaf is cooling, mix together the granulated sugar and cinnamon in a small bowl. Brush the top of the warm loaf with the melted butter, then generously sprinkle the cinnamon sugar mixture over the top.
9. Slice and Serve:
Once fully cooled, slice the loaf and enjoy the flavors of a classic apple cider donut in every bite!
