Cherry Cheesecake Bars
Ingredients:
For the Crust:
– 1 cups graham cracker crumbs
– cup granulated sugar
– cup unsalted butter, melted
For the Cheesecake Filling:
– 16 ounces cream cheese, softened
– cup granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 1 tablespoon lemon juice
– cup sour cream
For the Cherry Topping:
– 1 21-ounce can cherry pie filling
Directions:
1. Preheat the Oven and Prepare the Pan:
Preheat your oven to 325F 165C. Line a 9×9-inch baking dish with parchment paper, leaving overhang for easy removal.
2. Make the Crust:
In a medium bowl, mix the graham cracker crumbs, cup sugar, and melted butter until well combined. Press the mixture firmly into the bottom of the prepared baking dish to form an even layer. Bake for 10 minutes, then set aside to cool.
3. Prepare the Cheesecake Filling:
In a large bowl, beat the softened cream cheese and cup sugar together until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, lemon juice, and sour cream until fully incorporated.
4. Assemble the Cheesecake Bars:
Pour the cream cheese mixture over the cooled crust, spreading it evenly with a spatula.
5. Bake the Cheesecake:
Bake for 35-40 minutes, or until the cheesecake is set but slightly jiggly in the center. Remove from the oven and allow it to cool to room temperature, then refrigerate for at least 4 hours or overnight.
6. Add the Cherry Topping:
Once the cheesecake has chilled, spread the cherry pie filling evenly over the top.
7. Slice and Serve:
Lift the cheesecake out of the pan using the parchment overhang, slice into bars, and serve chilled. Enjoy the perfect combination of creamy cheesecake and sweet cherries!
