Soft and chewy, these Cinnamon Sugar Churro Cookies are stuffed with chocolate and rolled in a cinnamon-sugar coating, making them irresistible!

Ingredients:

For the Cookies:

Butter, granulated sugar, brown sugar, eggs, vanilla, flour, baking soda, salt, ground cinnamon.

For Rolling:

Cinnamon-sugar mixture.

For the Filling:


Chocolate chips or chocolate chunks.

Preheat the oven to 350F 175C and prepare a baking sheet with parchment paper.

Cream butter and sugars in a large bowl until fluffy.

Add eggs one at a time, beating after each, then stir in vanilla extract.

Whisk dry ingredients flour, baking soda, salt, cinnamon separately and slowly mix into the wet ingredients.

Roll dough around chocolate, forming stuffed balls, then coat in cinnamon-sugar mixture.
