Beef & Parmesan Tortellini in Creamy Sauce
Ingredients:
8 oz beef chuck, cut into cubes
12 oz cheese tortellini, cooked according to package instructions
2 tablespoons olive oil
1/2 cup onion, diced
2 cloves garlic, minced
1 teaspoon dried basil
Salt and freshly ground black pepper, to taste
1 cup heavy cream
1/4 cup Parmesan cheese, grated
Fresh parsley, chopped, for garnish
Instructions:
Brown the Beef: Heat the olive oil in a large skillet over medium-high heat. Add the cubed beef, season with salt and pepper, and cook until browned on all sides, about 5-7 minutes. Remove the beef from the skillet and set it aside.
Sauté the Aromatics: In the same skillet, add the diced onion and minced garlic. Sauté until the onion is soft and fragrant, around 3 minutes.
Create the Creamy Sauce: Return the beef to the skillet and pour in the heavy cream. Bring to a gentle simmer, then stir in the dried basil and half of the grated Parmesan cheese. Let it cook for 4-5 minutes, until the sauce slightly thickens.
Combine with Tortellini: Add the cooked tortellini to the skillet, stirring until the pasta is well-coated in the creamy sauce. Adjust seasoning with more salt and pepper if needed.
Serve: Serve hot, garnished with the remaining Parmesan cheese and chopped parsley.
