Ingredients:
2/3 cup cornmeal
1/3 cup self-rising flour
1/3 cup low-fat buttermilk
1 large egg
Oil for frying about 3 tbsp. coconut oil or your preferred oil
Instructions:
Prepare the Batter:
In a mixing bowl, combine the cornmeal, self-rising flour, buttermilk, and egg. Stir until the mixture is well combined and moist.
Heat the Oil:
In a skillet, heat the oil over medium heat until its hot but not smoking.
Fry the Cornbread:
Drop spoonfuls of the batter into the skillet, cooking them like small pancakes. Fry until golden brown on both sides, about 2-3 minutes per side.
Drain and Serve:
Remove the fried cornbread and place them on paper towels to absorb excess oil.
