Stuffed Butternut Squash with Spinach, Bacon, and Cheese
A hearty and flavorful dish featuring tender butternut squash stuffed with savory spinach, crispy bacon, and melty cheese. Perfect for a cozy meal!
Ingredients:
2 medium butternut squashes
4 slices bacon, chopped
1 small onion, diced
3 cloves garlic, minced
5 ounces fresh spinach
1 teaspoon Italian seasoning
Salt and pepper, to taste
1 cup shredded cheese cheddar or mozzarella
1/2 cup cream cheese, softened
Olive oil, for drizzling
Instructions:
Prepare the Squash:
Preheat your oven to 400F 200C.
Cut the butternut squashes in half lengthwise and remove the seeds. Place them cut-side up on a baking sheet and drizzle with olive oil, salt, and pepper.
Roast in the oven for 30-40 minutes, or until the squash is tender.
Cook the Filling:
While the squash is roasting, cook the chopped bacon in a skillet over medium heat until crispy. Remove the bacon and set it aside, leaving the bacon grease in the pan.
Add the diced onion to the skillet and sauté until translucent. Stir in the minced garlic and cook for another minute.
Add the fresh spinach and cook until wilted. Season with Italian seasoning, salt, and pepper.
Remove from heat and stir in the cream cheese and shredded cheese until the mixture is well combined.
Assemble & Bake:
Once the squash is done roasting, fill each half with the spinach and cheese mixture. Sprinkle the cooked bacon on top.
Return the stuffed squash to the oven and bake for an additional 10-15 minutes, or until the cheese is bubbly and melted.
