Oatmeal Raisin Cookies

Ingredients:

3/4 cup unsalted butter, softened

3/4 cup granulated sugar

3/4 cup brown sugar, packed

2 large eggs

1 tsp vanilla extract

1 1/2 cups old-fashioned rolled oats

1 1/2 cups all-purpose flour

1 tsp ground cinnamon

1/2 tsp baking soda

1/4 tsp salt

1 cup raisins


1/2 cup chopped walnuts optional

Instructions:

Preheat oven to 350F 175C. Line baking sheets with parchment paper.

In a large bowl, cream together butter, granulated sugar, and brown sugar until fluffy.

Beat in eggs and vanilla extract until smooth.

In a separate bowl, whisk together oats, flour, cinnamon, baking soda, and salt. Gradually stir in the dry ingredients until just combined.

Fold in raisins and walnuts if using.

Drop rounded tablespoonfuls of dough onto prepared baking sheets, spacing them 2 inches apart.

Bake for 10-12 minutes, or until cookies are golden around the edges.

Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
