Cinnamon Sugar French Toast Muffins

Ingredients:

For the Muffins:

2 cups all-purpose flour

1 cup granulated sugar

1 tbsp baking powder

1/2 tsp salt

1 tsp ground cinnamon

1/2 cup milk

1/4 cup melted butter

1/4 cup vegetable oil

2 large eggs

1 tsp vanilla extract

For the Topping:

1/4 cup granulated sugar


1 tsp ground cinnamon

1/4 cup melted butter

Directions:

Preheat oven to 350F 175C and prepare a muffin tin.

Whisk flour, sugar, baking powder, salt, and cinnamon.

In another bowl, mix milk, melted butter, oil, eggs, and vanilla.

Combine wet and dry ingredients gently.

Divide batter into muffin cups 3/4 full.

Bake for 20-25 minutes. Cool on a wire rack.

Mix cinnamon sugar. Dip muffins in melted butter, then coat with cinnamon sugar.
