Hawaiian Banana Bread
Ingredients:
2 cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3 ripe bananas, mashed
1/2 cup vegetable oil
2 large eggs, lightly beaten
1 teaspoon vanilla extract
1 can 8 ounces crushed pineapple, drained
1/2 cup shredded coconut
1/2 cup chopped walnuts optional
Directions:
Preheat the Oven: Preheat your oven to 350F 175C. Grease and flour a 9×5-inch loaf pan.
Mix the Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking soda, salt, cinnamon, and nutmeg.
Combine Wet Ingredients: In a separate bowl, mix the mashed bananas, vegetable oil, eggs, and vanilla extract until smooth.
Add Pineapple and Coconut: Stir the crushed pineapple and shredded coconut into the wet ingredients.
Combine Wet and Dry Mixtures: Gradually add the wet mixture into the bowl of dry ingredients, stirring until just combined. Be careful not to overmix.
Fold in Walnuts: If youre using chopped walnuts, gently fold them into the batter.
Bake the Bread: Pour the batter into the prepared loaf pan and bake for 6070 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve: Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
