Lemon Blueberry Loaf

Ingredients:

1/3 cup melted butter

1 cup sugar

3 tablespoons lemon juice

2 large eggs

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon salt

1/2 cup milk

2 tablespoons grated lemon zest

1/2 cup chopped walnuts optional

1 cup fresh or frozen blueberries

For the Glaze:

2 tablespoons lemon juice

1 tablespoon melted butter

1 cup confectioners sugar


Instructions:

Prepare the Batter:

Preheat your oven to 350F 175C. Grease a loaf pan and set aside.

In a large mixing bowl, combine the melted butter, sugar, lemon juice, and eggs. Mix until smooth.

In another bowl, whisk together the flour, baking powder, and salt.

Gradually add the dry ingredients to the egg mixture, alternating with the milk. Stir until just combined.

Fold in the grated lemon zest, chopped walnuts if using, and blueberries.

Bake the Loaf:

Pour the batter into the prepared loaf pan.

Bake for 61 to 71 minutes, or until a toothpick inserted into the center comes out clean.

Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Make the Lemon Glaze:

In a small bowl, whisk together the lemon juice, melted butter, and confectioners sugar until smooth.

Glaze and Serve:

Once the loaf has cooled, drizzle the lemon glaze over the top.
