Linzer Tart Cookies

Ingredients:

1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

2 cups all-purpose flour

1/2 cup almond flour

1 tsp ground cinnamon

1/4 tsp ground cloves

1/2 tsp vanilla extract

1/4 tsp salt

1/2 cup raspberry jam or your preferred jam

Powdered sugar for dusting


Instructions:

Preheat oven to 350F 175C. Line baking sheets with parchment paper.

In a large bowl, cream together butter and sugar until fluffy. Beat in egg and vanilla extract until smooth.

In a separate bowl, whisk together all-purpose flour, almond flour, cinnamon, cloves, and salt.

Gradually add dry ingredients to the wet mixture, mixing until a dough forms.

Divide dough in half, wrap in plastic wrap, and chill for 30 minutes.

Roll out one dough portion on a floured surface to about 1/8-inch thickness. Cut out rounds with a cookie cutter.

For half of the cookies, cut a smaller shape in the center such as a heart or circle.

Place uncut cookie dough rounds on the baking sheets and spoon a small amount of jam onto each. Top with the cut-out cookies.

Bake for 8-10 minutes, or until edges are golden. Let cool on the sheets for 5 minutes before transferring to a wire rack.

Once cooled, dust cookies with powdered sugar for a finishing touch.
