Red Hot Cinnamon Hard Candy
Spicy, Old-Fashioned Cinnamon Candy for the Holidays
Ingredients:
Butter for greasing
4 cups granulated sugar
1 cup light corn syrup
1 cup water
1 teaspoon red food coloring optional
1 teaspoon cinnamon oil
1 cup powdered sugar
Directions:
Prepare the Pan: Grease a 15″”x10″” sheet pan generously and line it with buttered parchment paper to ensure the candy wont stick.
Make the Sugar Mixture: In a large saucepan, combine the sugar, corn syrup, water, and red food coloring if using. Stir over medium-high heat until the sugar completely dissolves and the mixture comes to a rolling boil. Once boiling, let it simmer for about 3 minutes.
Heat to Hard Crack Stage: Attach a candy thermometer to the side of the pan, ensuring it doesnt touch the bottom. Heat the mixture to 300F 150C, known as the hard crack stage. This is key to achieving the perfect crunchy texture.
Add the Cinnamon Oil: Once the sugar mixture reaches 300F, immediately remove it from heat. Carefully stir in the cinnamon oil be mindful as it can release strong fumes, and mix well to ensure an even flavor throughout.
Pour and Cool: Pour the hot candy mixture into the prepared pan, spreading it out evenly. Allow it to cool at room temperature for 1.5 to 2.5 hours until fully hardened.
Break the Candy: Once the candy is completely set, dust the surface with powdered sugar to prevent sticking. Use a hammer or the back of a knife to crack the candy into bite-sized pieces.
