Creamy Cajun Pasta with Shrimp and Sausage
Ingredients:
8 ounces penne pasta
1 tablespoon olive oil
8 ounces pork sausage, sliced
12 ounces large shrimp, peeled and deveined
1 tablespoon Cajun seasoning
1 small onion, chopped
1 red bell pepper, chopped
2 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
1/4 teaspoon red pepper flakes optional
Fresh parsley, chopped for garnish
Directions:
Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
Cook the Sausage: In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 4-5 minutes. Remove and set aside.
Sauté Shrimp: In the same skillet, add the shrimp and sprinkle with 1/2 tablespoon of Cajun seasoning. Cook for 2-3 minutes per side, or until shrimp turn pink and opaque. Remove and set aside with the sausage.
Cook Vegetables: Add the chopped onion and bell pepper to the skillet. Sauté for 3-4 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant.
Make the Sauce: Stir in the remaining Cajun seasoning, heavy cream, chicken broth, and red pepper flakes if using. Bring the mixture to a simmer and cook for 2-3 minutes until the sauce thickens slightly.
Add Cheese and Protein: Lower the heat and stir in the Parmesan cheese until melted and combined. Add the cooked sausage and shrimp back to the skillet and stir to coat with the sauce.
Combine with Pasta: Toss the cooked pasta into the skillet, ensuring the pasta is evenly coated with the creamy Cajun sauce.
